
Ingredients
8 Roma tomatoes
11/2 Cups pitted kalamata or green olives
1 cup cubed feta cheese
½ juice of lemon 3
¼ cup premium olive oil
2 Tablespoons fried garlic (optional)
1 teaspoon sugar
1 large Seedless Cucumber
½ cup diced red onion
½ cup parsley and mint
tablespoons red wine vinegar
½ Teaspoon sumac
1 red bell pepper
Directions
De-seed tomatoes and dice
Peel and de-seed cucumber and cut into a small dice
Chop olive into halves
Cut feta into small cubes
De-seed red pepper and cut in small pieces
Finely mince mint and parsley
Finely mince red onion
Juice lemon and add to dish
Add vinegar and olive oil
Add sugar
Add sumac
Add salt and pepper
Gently combine everything together with your hands or spoon and serve it in your favorite bowl
Note: You are welcome to make this a chunkier salad and use other herbs such as fresh oregano. You can leave out the feta cheese to make this dish completely vegan. This dish goes will with our chicken Zatar, Koftas, or as a main with protein on top.
